When I click on a bookmark in the bookmaks toolbar the list of bookmarks go away. How do I keep the bookmarks menu rolled down (like a sidebar)?

You can't.
But you can open Edit, from the Bookmarks, and double-click the bookmarks to open them.

Well that´s kind of a awkward way of doing it. A second click on the toolbar icon to close the list of bookmarks would be much neater and it can´t be that hard to implement.
